HOW IS BATCH #3 DIFFERENT THAN BATCH #2?

Batch #2 was a blend of two rye whiskies (85% rye, 15% wheat) sourced from once-used rye barrels.

Batch #3 is a blend of five different wheat whiskies (100% wheat) sourced from ex-Kakwa Rum barrels.

BATCH #2 - Sold out

A blend of two carefully selected single distill rye whiskies, each aged for 3 years in fresh-dumped rye barrels from Heaven Hill Distillery in Kentucky. We distilled, barreled, blended, and bottled this extremely limited second whisky release to showcase the bold, earthy flavours of Canadian rye with the sweet, soft touch of Canadian wheat added for balance. 43% ABV

SERVED NEAT

APPEARANCE:
Warm amber with highlights of spun gold.

NOSE:
Early morning bakery shop aromas of vanilla cake, honey, and fresh bread greet you before yielding to the bright, fruity esters of Bartlett pear and Granny Smith apple. Underlying notes of dust and oak are present throughout.

PALATE:
Dominated by dry, library leather tannins that carry a noticeable cereal body from front to back. A light caramel sweetness is complemented by bold baking spices and smoked maple walnuts.

FINISH:
Warm and lingering, the astringency on the palate persists as distinctive grassy and clove characteristics take over.

SERVED WITH A FEW DROPS OF WATER
Here the small addition of wheat in the mash bill opens up and softens the nose and palate to deliver sweet, creamy textures and aromas. Graham cracker, black pepper, and nutty flavours emerge.

BATCH #1 - Sold out

The first small batch of our premium Canadian whisky was aged 3 years in once used bourbon and once used rye American oak barrels. This blend of wheat and rye whiskies offers a unique tasting profile with a caramel and honey sweetness up front, discernible notes of lingering leather and sandalwood, and a refined but subtle rye and clove finish.

Only 624 bottles produced.
